Handful of chile verde
1 tomatoe
1 small onion
pinch of salt
1 tablespoon olive oil
2 teaspoons mustard
some Texas style bottled Mesquite BBQ sauce, or any brand
Cut up chile verde, tomato, and onion into very small pieces. Put all ingredients in sauce pan. Add salt, oil and mustard. Add enough bbq sauce to taste and stir. Simmer for 10-15 minutes, then slop it on your favorite meat on the pit.

SPICEY CASSEROLE OLE
This recipe is from a box of H.E.B. precooked enriched rice. (remember, anything that says ENRICHED, only means that the good stuff was taken out to put in preservatives which are not good for you, wont necessarily kill you, but they aren't good for you. the word ENRICHED is a trick word).
1 lb ground beef
1/2 cup chopped onion
1/4 cup chopped green pepper
1 tsp. salt
1 tsp. chili powder
1 can (15 0z) kidney beans, drained
1 cup HEB INSTANT RICE, PREPARED
1 can (8oz) tomato sauce
2/3 cup shredded American processed cheese
preheat oven to 375 degrees f. In a skillet, brow beef, onion, and green pepper. Pour off excess fat. Stir in salt and chili powder. IN a 1 1/2 quart casserole dish, alternate layers of beef mixture, beans, rice, and tomatoe sauce. Sprinkle with cheese. Bake for 15 minutes. Makes 6 sevings (about 1 cup each)

Savory Chicken

Makes 4 servings.. Found this recipe on the back of a can of Red Gold Stewed Tomatoes 100 % natural.
2 cups chicken broth
1/4 cup flour
salt & pepper to taste
4 skinless, boneless chicken breasts
1 tablespoon olive oil
1 (14.5 oz) can RED GOLD stewed tomatoes
4 green onions, chopped
1 cup cooked orzo pasta
Into a pie plate, pour 1/2 cup broth. Place the flour, salt and black pepper in a gallon plastic bag. Dip chicken breasts into broth and then place in plastic bag. Seal and shake to coat all pieces with flour. Add Oil to a large skillet and heat. Add chicken and cook on medium high heat until both sides of chicken are golden brown. Remove chicken from skillet and set aside.
Add remaining flour to skillet; cook and stir until brown. Slowly add 1/4 cup chicken broth; cook until thickened. Gradually stir in remaining broth; continue to cook and stir until slightly thickened.
Add Red Gold tomatoes and green onions to skillet. Bring to a boil; reduce heat to low. Add pasta to sauce and stir. Return chicken to the skillet and simmer until cooked through, about 10 minutes.
I have used these Red Gold tomatoes and they have a lovely flavor. I also like that they are all natural. I am using them now in a pot roast I got on sale at H.E.B on Thursday. I saved 28.00 at H.E. B using my coupons.
A short note to everyone, I am cigarette smoke free now for 4 months. I am proud of myself. Please, think about stopping smoking if you do as later in your years it can cause allot of health problems.
Some may know of our desperate situation here at our house. Last year we lived through a very cold winter without the proper electricity. Imagine yourself camping out in the middle of the freezing winter with no camp fire and trying to cook . This is what it was like last year. I see no way of getting the cash my self. My grand babies come in the holidays to stay while my daughter is in college and works. My husband has health insurance, but we have to pay for his heart meds and his blood pressure meds now as they changed the policy . He works at the Gonzales County Sheriffs Dept now for 9 years. He does not make much money. We are NOT on any welfare either. Please if you can see it in your heart to make a donation to help us get our electricity repaired we would appreciate it. I had 2 people so far offer to do the work but they were not certified electricians. I sure do appreciate the offers though with all my heart, but if something happened to you or later down the line, to the house, I would feel awful.
I have never begged or asked for money in my life, so this is not easy for me. Thank you and God bless.

Johnny Cakes Old fashioned goodness.

I used to eat pork along time ago. I found out that pork is unclean so I quit eating it. Basically a pig eats anything it can including fecal matter. That is not really something I wish to put in my body.
When I stopped eating pork, I started losing weight and feeling better. I did a test and put 4 raw pork chops in my oven & turned the oven on to warm for 20 minutes. Worms started coming from the pork. I had to sanitize my intire oven.
My friend told me, when the pork is cooked, the worms die. Yah?? I am not thrilled to eat the worms nor the meat they borrow in. Thanks anyway. By the way, my friend?? She is 65 pounds overweight and has alot of health problems.
So, way back when I stopped eating pork...I went back to the basics of life. Eating what man is intended to eat. I ran across this Johnny Cake recipe and will share it. It is a common recipe, but an old fashioned one, with out pork or worms in it. Enjoy.
Legend has it that the name derives from "journey cake", meaning a bread that could be cooked ahead when going out to work or on a journey.
In any case, there are as many recipes for Johnny Cake as there are cooks in Anguilla, ranging in style from something like hard-tack to something more like a donut. If you eat at local places in Anguilla, you will have Johnny Cakes eventually.
Johnny Cakes
3 Cups Flour
1/4 Cup Cornmeal
2 Tablespoons Baking Powder
1 Tablespoon Salt
3 Tablespoons Sugar
1 Tablespoon Margarine
2 Tablespoons Vegetable Oil
1-1/2 Cups Water
1/3 Cup Frying Oil for Cooking
Sift together flour, cornmeal and baking powder. Mix together with salt, sugar and margarine. Make a well in the flour mixture and add vegetable oil. Add water slowly. Mix carefully until mixture is not sticky. Knead into a ball until smooth. Cover and let sit for 15 minutes. Roll dough into a long strip and cut into small pieces. Knead each piece into a small ball. On a floured surface, flatten each ball with a rolling pin or your finger tips and palms. Add about 1/3 frying oil into a frying pan or enough oil to cover bottom of pan. When oil is hot, add flattened cakes. Fry on one side for 2-3 minutes, turn and continue with other side until both sides are golden brown.
Servings: 1-1/2 dozen
