Leslie's South Texas Style Fried Catfish Nugget Recipe

I love me some catfish nuggets, and so does my husband.  I made this tonight and am sharing this recipe with you.  This recipe is for about 3-4 people. You can double this for more nuggets per person.

You need

10 Catfish nuggets (skinned and bones removed)
1 cup milk
3-4 tablespoons Louisiana Hot Sauce (this is what I use, use what you like)
Salt and pepper
1 teaspoon garlic powder
1/2 cup yellow corn meal
1/2 cup flour
oil for frying
cast iron skillet

Heat your oil up in that there cast iron skillet and get it good and hot.  Have all the rest of this stuff ready so you don't burn the house down.

First, mix your milk and hot sauce together real good.  Put your fish in the milk mixture to soak.  Mix together all your dry ingredients together.

Take the catfish out of the milk mixture and roll it in the flour mixture.  Fry in hot oil till browned on both sides, somewhere around 4 to 7 minutes, depending how big your nuggets are.

This is good with a cold beer from Shiner, Texas or maybe a tall glass of iced tea.  Pan fried veggies (i just toss my veggies in some butter in a skillet till tender), and maybe a macaroni or potato salad.
